Changing Sizes

My wedding set and my anniversary band are getting too big. My anniversary band is a size bigger than my wedding set. Last weekend I stopped at the jewelry store to have a temporary sizer added to it. I'll have them resized once I hit my goal weight.

Frustrated

So almost two years ago the neighbor's cousin drove through our fence and retaining wall. It has gotten to the point where we hired a lawyer and are going to court over this because she refuses to pay for the repairs. For some reason she doesn't think that she should have to pay for it because it wasn't her fault that her breaks failed or some dumb reason like that. So our lawyer asked for some pictures of the retaining wall, I trekked out through the land of dog land mines and took some new photos. Through this whole process I have been getting more and more annoyed with the fact that we're the ones having to pay for everything and do all of the work for repair quotes and everything else when she's the one who's at fault for not testing her breaks and for driving without insurance.

Good Morning Momma

This is the face I woke up to this morning. She needed to cuddle before I got out of bed and jumped in the shower. It mornings like these that I'd like to stay in bed all day.

Another Wednesday Night

Monopolies, competitive markets, revenue, costs... Enough to make your head spin. Only 6 more weeks...

March 27 Blog Post - The Hunger Games

We saw the movie over the weekend. I enjoyed it and I was impressed. I started the book but I haven't gotten very far.

Just another cake

Tomorrow is Ethan's birthday. For some reason making a cake for the boss is nerve racking.

So Naughty!

There are some days that I swear Isaboo is not the same dog! She has some days that she is just naughty. Today was one of them! She was not listening, she barked at random things for no reason, she tormented Bear and took toys away from him and worst of all she dug out the ant trap I had wedged into the sliding glass door! So now I am keeping a watchful eye on her to make sure she doesn't get sick.

Good Bye Fig

The MN Renaissance Community lost a great man this weekend. I didn't know John well and I knew him better as Lord Figaro. I have never really been a member of "that group" but the few times that our paths crossed he was always friendly and welcoming. He has left this world too soon. God Speed Ford Fig! Until we meet again we raise our mugs to you.

135/150, 90% or 5 wrong out of 50. However you say it I will take it! Science is done for the week! I still have my Econ assignment to do but the rest of the night is mine!

Supervising

Isaboo jumped up on the back of the couch tonight when I was doing my homework. It's like she was keeping an eye on me to make sure I was doing it.

Test Weeks

I really do not enjoy test weeks. Just as much homework plus throw in a test that covers 5 chapters. I feel like all I do is bury my nose in my notes. Well better get back to it!

Organization!

I have a test this week so I spent some time organizing my notes. I may have gone a little over board.

Sunday, March 18's Blog- My New Favorite App

I realized this morning I forgot to post yesterday and I am finally getting around to it.

I was wandering around Target yesterday looking for lunch and snack ideas and trying to compare different cheeses. Then I remembered that I have this app on my phone. WW Scanner. It will scan the bar code of most items and tell me the point values which helps me choose the item with the lowest weight watchers points.

I will forever have to ice

At least it seems like I will forever have to ice my ankle. I've been switching back and forth between shoes this week since it's been so nice out. As a result my ankle has been sore. Today after wandering around shopping for a couple of hours today it was swollen so I popped a couple of Advil and have been making nice with my ice pack today.

Green Velvet Cake Part 3

The green velvet birthday cake was a hit at work. You can not go wrong with buttercream.

Adapted from Paula Deen's Red Velvet Cupcakes and Wilton's Buttercream Icing. I used two 9 inch square cake pans.

Ingredients

Cake

• 3 3/4 cups all-purpose flour
• 2 1/4 cups sugar
• 1 1/2 teaspoon baking soda
• 1 1/2 teaspoon salt
• 2 tablespoons cocoa powder
• 2 1/4 cup vegetable oil
• 1 1/2 cup buttermilk, room temperature
• 3 large eggs, room temperature
• 4 tablespoons green food coloring
• 1 1/2teaspoon white distilled vinegar
• 2 tablespoons vanilla extract

Preheat the oven to 350 degrees F. Grease and flour cake pans

In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.

Divide the batter evenly among the cake pans. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cakes with a toothpick for doneness. Remove from oven and cool completely before frosting.

Butter Cream Icing

• 4 sticks unsalted butter
• 2 pounds of powdered sugar, sifted
• 2 tablespoons vanilla extract
• 2 tablespoons milk or water
  

In large bowl butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use

Separate out 1/3 of the buttercream icing and dye it green with gel food coloring. Once cakes are cooled add a thin layer of buttercream icing to the top of one cake, stack the other cake on top. Frost the outside of the cake with the white buttercream and decorate with the green.

Green Velvet Part 2

I finished the birthday cake for work tonight. I've decided I really like the Wilton's whitener. It really makes yellowed butter cream white white! Now if only my lettering was straight!

Green Velet

I have a favorite red velvet cake recipe and a few days ago on Pinterest I saw a green velvet cake. So I decided why not make my red velvet green?! I am making a cake for work, it's Scott's birthday on Saturday so I baked tonight and I'll decorate tomorrow! It smells really yummy!

Sabrina

Baby Girl, Princess, 'Bina, Sabrina bean. She has many names. She does not like having her picture taken it usually takes me at least 20 pictures to get a good one. She closes her eyes, turns her head or moves. She is the princess of the house. We got her two weeks before we got married which means she's going to be twelve this year. I know our time with her is limited so I'm trying to take advantage of the time we have.

Deal of the Day

I went out shopping tonight to look for a birthday present. I stopped at Target and happened to find these shoes tucked in the clearance section. I was excited to see them on clearance for $12. Imagine my surprise when they rung up at $7! Score!

Rough Life

The weather today was beautiful. The dogs spent most of the day outside. It must have worn them out because all three of them are laying around and sleeping.

Lost Watch

So I have 2 Mickey watches my smaller gold one and my larger black one. I have been searching the house for three days to find the black one. I have no clue where it is!

My Friday Night

Yet another Friday night spent doing homework. I think I may have found a Caribou that isn't overly loud and busy, other than the people on the date sitting across from me, but oh well that's what my headphones are for. Tonight's drink... COD w/Steamed Milk, Moosed with 1 raw sugar.

I'm going to pout because no one is paying attention to me

It amazes me how emotional Isaboo can be. Last night she kept trying to get my attention while I was studying. I told her to go lay down so she did with a big sigh and then fell asleep.

This is where I spend my Wednesday night. Only two more months.

Open Window Weather

I got home from work today and it was so nice out that I opened the windows and shut off the heat. It felt good to air out the house. I figured it would get a little chilly over night so I shut the windows, but I left the heat off.

I finished my homework yesterday so we all spent some time this morning laying around watching tv. Here's how Isaboo spent her morning.

Such a Momma's Girl

Isaboo bonded with me when she was a puppy and I was taking her to work with me. So now any time I'm gone when I come home she's attached to my hip. Thus morning I left to go work on some homework at the NE Minneapolis Coffe Shop. I just got home a little while ago and as soon as I sat down she climbed up on me and went to sleep.

Happy Birthday Riley!

Riley turned 6 today. What do you get a 6 year old? I always try to get the kids something fun but educational. I happen to be in Half Price Books the other day and came across some Cars books and activities. $18 later and the kid has 3 books, a puzzle book, a paint book and some flash cards. Not a bad haul!
